whatever the contract is between you and your employer.
for instance if you are in the grocery biz...the union says how many days or hours you can work before they need to give you time off or pay 3x you pay.

Yes
Listen, you choose who you work for. If the boss won't cut workers slack, they leave, and then the company fails. Quit your job, but on the way out, tell your boss why.
Workers have few legal rights by the federal and state governments. That is why unions were formed, to fight for the rights of common workers.
you are not entitled to any days off, there is no federal, state law dictating days off that i am aware of.
it depends on your work week set up. you have to have at least one day off per week. if your days on run into the next week it doesn't count.
talk to your manager and see if they can break up your week for you
1 calender month - you are entitled to 3 days but for the entitle month you are required to work 12 months for this 3 days
Anymore it depends on the job, and what the guidelines where when you were hired.
Look at the Firemen, they have long shifts - multiple days, then a few off.
Check with your local labor board.
