How do you sue for "soliciting unlawful acts, deceptive business practices"?

What is the proper "legal" jargon used in a civil lawsuit? In my counter claim, how do I word that?

Answers:
You start by hiring a lawyer. The lawyer will explain the next steps.

Was there a contract that was breached? If it's complictated, you should probably hire an attorney or you won't win anything.
Go to the statute and see what the cause of action requires. In Texas the Texas Business and Commerce code cover deceptive business practices, and is prosecuted by the state attorney general. There can also be a suit for damages by a person injured by the action. If you are in Texas and being sued under this law you probably need an attorney to quote the "proper legal jargon", because they might be entitled to 3 times the actual damabes, plus attorney fees if they win.
