So my car is in my (ex) b/f's name?
I have paid all the payments and the money comes right out of my checking account. I have a notarized piece of paper that says i make all the payments and that when it gets paid off the title will be in my name. Can he get mad at me for dating someone else and come take the truck, even if i have a notarized piece of paper. Cops said to ask an attorney.

Why do people make agreements like this?
If you have a signed, notarized document that says you get the title with the truck is paid for, you should be O.K. I would save all the receipts and proof of payments in case you need to go to court.
the car legally belongs to whomever is named on the title - it doesn't matter who made the payments
he's just going to deny that he notarized anything for you and when the cops show up to arbitrate the dispute, they will let the person whose name is on the title take it.
if you want it, you are going to have to go to court.
