if u see a crime happening and u can stop it but u have a knife and u can stab the guy to stop him is it Ilegal to do that even if its stoping crime?

You can use deadly force in the event that a person's "life" is at risk.
pulling a knife on anyone is a crime, even when the man is a suspect of a crime. Best advice is stop the man by tackling him to the ground and keeping him there till somebody arrives to help.

matters the severty of the crime he is commiting so say someone is trying to kill someone and you stab the bad guy nothing will happin to u but if some teenager is stealing a pack of candy and you slit his throught....youll go to jail for murder

It depends on whether the force used to defend yourself or another was reasonable in the circumstances. Eg If someone comes at you with a knife/gun and you genuinely believe you are in imminent danger it may be reasonable to defend yourself with force. On the other hand if someone threatens you with a pencil then using a gun/knife to protect yourself is unlikely to be a reasonable responese and would lead to charges being laid against you.
You aren't a policeman, right? Dangerous thing to do. Hard for you to justify your use of deadly force if your life wasn't threatened.
