How can I protect myself as an HR Officer?
I'm in charge of all HR tasks. How can I protect myself from "my-word-against-yours -situations"?

EMAIL...communication is KEY...keeps everyone honest...always CC (carbon copy) a higher level official on your email to cover your hiney too...if you can't email, draw up a generic letter and make ALL parties sign it.
Tape conversations, but make all parties aware of the fact they are being recorded.
Videography is an option too, again, you'll have to disclose that upfront.

document everything and get people to sign it. If you have a meeting have someone sit in and take notes. The have the notes typed up and signed. The person taking notes should be your right hand at work. This is how we do it in HR where I work. Never have a meeting one on one. Always document and cover you a--. If you don't document it never happened.
Simple: Either tape record all meetings OR never meet alone with someone. I recommend the second option.
Document, document, document. Also, have a non-biased third party in the room when dealing with personnel situations.
Put everything in writing!
