Corperate Ethics Policies and Part Time Self employment?

I work for a corporation that has a very vague and all in compassing corporate ethics policy that states that employees can not be affiliated with a job or business that may cause any "conflict of interest". I believe that this is a very unfair statement as this can be left up to interpretation to whom ever would like to being a jerk.
If you are an employee and do your job while you are working and have out side work on your own time, why are you made to sign a policy that can so vague?
Can anyone assist on giving advise of what I can do?
