Can a deed of trust be agreed in an email?

No - it can't.
In order to be legally binding, a deed must be (i) signed (ii) witnessed and (iii) formally sealed.
None of these can be done by email (at least, not in a way which is acceptable to a court)
A deed can probably be agreed to in an email, but different jurisdictions also have other requirements for a deed.
Some of the classic requirements are that it be "signed, sealed and delivered". It would depend on legislation in your area if an electronic signature would be effective. Similarly a seal would need to be affixed, or some acknowledgment in place of a seal. Some jurisdictions require you to notarize it. It also needs to be delivered and accepted by the recipient.
All of that suggests that it is a lot easier (and a lot more certain) if you have a physical piece of paper to prove a deed.
