How do they find the person who stole a moneyorder and cashed it?

They don't, usually. The company that issued the money order will reimburse you for the amount if you meet their criteria for a stolen money order. Call the company, explain the situation, and the Indian guy on the other end will explain to you in imperceptible English what you need to do.

Probably will not be able to. Money orders are very hard to find and trace to person who cashed it. Get a cashiers check.
The person might get away with it.

Many retail places have cameras, hidden or not, that show information about people doing business some place at a particular time of day.

The police can lift fingerprints off of money order, figure out which are the clerks & which are someone else.

Depending on from where it was stolen, the police might find evidence there.

Actually, if it is for a small sum of money, the police might not want to be bothered.
hello,,you must know where it was cashed, and if they have video security they can possibly I.D. the criminal. you must report the theft first. and press charges when it is found out who it was, hope it was not a "good" friend.
