If my husband put too much Tequila in the salsa, and I didn't know it, and it got me drunk and I committed a
crime while under the influence, but was too drunk to remember it, could I sue him in a civil lawsuit?

I think the only crime would be to your system when it realizes how much salsa you ate to get drunk off the tequila.

If you commit a crime and your defense is that someone got you drunk and because you were drunk you committed the crime you would be guilty. Whether or not he got you intoxicated on the sly or not you would know yourself to be drunk. One cannot be drunk and not know it- at least not drunk enough to commit a crime and feel the need to blame the offense on impaired, intoxicated judgment. You can not use intoxication as a defence- best example is drunk driving.
You can sue someone for anything. You can sue your neighbor for punitive damages for looking at you funny. That does not mean you will win the case, though. If you tried to do this, the case would probably be thrown out and you may face a counter suit if you drag your husband all the way to court.
I never knew they put tequila into salsa and if they do there is NO WAY you would get drunk off the stuff without knowing it was in there. It would taste like you're taking a shot each time you ate a chip and to get drunk by dipping chips would take something like five bags of chip just for you alone. The salsa would look like soup and smell like a bottle of liquor.

Well first you don't sue your husband. You sue the tomato growers, the onion growers (hopefully Vidalia Onions, they are rich), and the grocery store who sold him the produce. The cilantro growers are probably poor Mexicans so don't bother them.
Don't forget the Tequila maker, distributor and liquor store. Sue them all for $50 million and settle for $5 million. Now at this point you can take your husband to Rio with you or you can bring assault charges against him and find yourself a nice towel boy on the beach.

No, you couldn't. You Assumed the Risk by eating salsa that you KNEW had tequila in it. It doens't matter the amount of tequila that was in it.

You'd basically have to be drinking the salsa, and there would have to be something wrong with you not to notice that much tequila. Tequila is not exactly a light-flavored liquor. But I would say that if you did unknowingly get drugged by somebody else (and alcohol IS a drug), then you could have a defense in criminal court. After (if) you get acquitted, *could* you sue him for your legal fees? Yeah I guess, but there goes your marital relationship.
