Is hustling against the law?

For example, what if I did a 1 player round of bowling and I did horrible. Then, I would challenge someone to a match they bet $100 that they would win. Then I would beat them and take the money.

No it is not against the law..but the gambling is.
Depends on the laws of the land you are in. For example, you can walk down the street with a needle full of heroin sticking in your arm in India & it's completely legal. I'd say you could probably get away with a match like you mentioned if it was on a written agreement. It's like fighting in the streets is frowned upon, but sign some release waivers & its good to go.
Don't you think the other player would be suspicious that you'd take them up on the bet after only one game? Well, h**l, if they're not, go for it even though it is illegal. It'll probably never happen again and if the other person is a friend, they no longer will be. Plus you risk a physical confrontation.
